pea crisps with roasted carrot “hummus”

My family likes to  uh…  we like to  ummmmm… I snack. As a gluten-free individual it is difficult & often expensive to find tasty snacking options. My GF Pinterest board gets a lot of activity: I’ll find a recipe & if I try it but don’t like it, I delete the pin. I’ve been trying various crisps & crackers made of assorted meals & flours then baked, dehydrated or fried. DSCN7079My “pea offering” is a result of those ideas.Picture5Although it may look like a long recipe, it is really pretty simple. The hardest part was waiting for them to cool before eating!dough

I loves me a good hummus! I’ve blogged about this fixation lust obsession love of mine here, and here. A Pinterest pin I found led me to this recipe. (Thank you, Ms. Camilla, for this bowl of incredible tastiness!) I did change it ever so slightly to reflect my family’s tastes.recipeDecidedly the most difficult part of this process was staying in the house while smelling the carrots roasting with the garlic & cumin!DSCN7040…did have to make a little grocery run to pick up the rest of the ingredients…DSCN7045The dip is a little sweet, but my guys devoured it. They gave the dip & the chips all thumbs up. My aunt was visiting and she enjoyed the tasting as well. rat

  6. I'm all over the carrot ideas...but the English peas? That's the one vegetable I don't like. :-( I like every other veggie--even brussel sprouts.

    1. The beautiful thing about these crisps, Julie, is that you can sub any veg you like in them. The amount is so slight, you barely taste it. (unless you use something very strong... ;) ) You can also use other seeds or nuts for the sunflower. I look forward to see what you try!

  9. Both your chips and dip recipes sound wonderful and I love that they're GF and don't contain any of the other ingredients that my little one is also allergic to. I'm going to give both of these a try, I hope that they're as big a hit in my home as in yours.
