Irish Nachos

Living in the great Southwest means growing up loving certain flavors. When my boys have to fend for themselves, they make cheese crisps (quesadillas) or nachos. Sometimes they come up with some interesting combos! For instance, my eldest concocted this with Wasabi Doritos.
Most times our nachos come out looking something like this:


Kristin's Improv Challenge for this month utilized potatoes & cheese for our base ingredients. This gave opportunity to add another bit of international flair to our nacho repertoire. And how appropriate for St. Patty's day!
We started with a base of oven-fried potatoes. (Recipes all over the internet! Here's a simple one, if you need it.)
We like to pile on the feather shred. (The boys are partial to medium cheddar.) 
I stuck the plate back into the oven so it could get good & melty...
... & a dollop of sour cream topped that.
Next came some slivers of corned beef.  You could use bacon crumbles, if you'd rather...
Sprinkle on a bit of green onion...
...and garnish with finely shredded (raw) cabbage.
Forget the forks! 
Dive in with both hands!
It is that good!
(Now I'm just being mean...)

    1. Sauerkraut would ruin it! I did use Napa cabbage, that should be a little milder...

  2. I love it! I actually have all of the ingredients in my kitchen (including the cooked corned beef), so I may be trying this very soon! Great job.

  3. I'm thinking that I have all the ingredients in my kitchen right now...but then I'm thinking that I would probably make myself sick eating the entire batch... Wish I could just reach into the computer and grab one...YUM.

    1. hahaha, Lisa! I actually fixed this for my boys' lunch on Tuesday (bloggers gotta have good light for pics, right?) & was going to make it for dinner either Friday or Saturday. The guys all begged for it Tuesday night! (Wouldn't be surprised if they asked for it on the 17th, too...)

      Did want to say that I tossed the corned beef into a skillet to render out the fat, so it's not quite as artery-clogging as it looks!

  6. I would totally eat that! In fact, I may just have to make some very, very soon!!! I have been contemplating using potatoes for nachos. You beat me to it in a variation I'd not thought of :-)

    1. Kristen, I was just going to use ready-made criss-cut fries & that would've made the process so much quicker. But those oven "chips" tasted pretty good!

    1. The oven-fried potatoes were the most time-consuming part. Everything goes together quite easily with a little prep. The end product is worth it!

  10. What a clever way to make nachos! And there isn't an ingredient in here I don't like ... I'll definitely keep this is mind for St. Patrick's Day leftovers! Great recipe!
